Easy, Yummy Barbecue Chicken

Hi everyone! I'm so happy that it's finally spring. Spring makes me feel refreshed and ready to try new things. This week i made these simple, easy chicken legs in the oven. They are so basic that I almost feel silly for sharing them. If your anything like me, you get stuck in your ways and make the same meals over and over again. I think everyone would enjoy these. My picky 3 year old approved so I will be making these again.
- bone in, skin on chicken legs
- salt & pepper to taste
- barbecue sauce
- Liquid Smoke (1 teaspoon)
- dried parsley (optional)
Directions:
*Using something that keeps so chicken raised off the pan some helps prevent soggy skin. If you don't have either, I think you could get away with lining a regular baking sheet with aluminum foil.
- Season chicken with salt & pepper to taste.
- Mix Liquid Smoke in with the barbecue sauce of your choice. In a separate bowl, cover chicken legs with barbecue sauce/liquid smoke mixture. I did not measure the barbecue sauce. I did not measure the barbecue sauce. If I had to guess, I would guess that I used about 2 cups total of barbecue sauce.
- Arrange the chicken onto your pan. Try not to crowd, I crowded mine a little. Oops!
- Move your oven rack few inches from the top (I put mine on the 2nd notch). Turn the broiler on high and broil the first side for 5 minutes. Flip the legs and broil the other side for 5 more minutes.
- I baked them on 375 degrees for about 45 minutes. You can add more barbecue sauce if you would like.
- Sprinkle with parsley for an extra touch.
Tip: For enhanced flavor, marinate for 30 minutes or overnight.
See how easy?! Minimal effort on weeknights is a win for me. The broiling and the Liquid Smoke really make the difference in the recipe. I would not skip those steps. That's it from me this time. I hope you all enjoy if you try this.
